Gemmed Fairy Cakes is a traditional British recipe for a classic children's party fairy cake or mini cupcake topped with white icing and decorated with small sweets (candies). The full recipe is presented here and I hope you enjoy this classic British version of: Gemmed Fairy Cakes.

Excellent for children, or just for fun these little fairy cakes are baked in petits fours cases.
Ingredients:
For the Cakes:
75g butter, softened
2 large eggs
100g self-raising flour
1 tsp (level) baking powder
75g caster sugar
For the Icing:
100g icing sugar, sifted
1 tbsp lemon juice
small sweets (eg jelly tots, small Turkish delight squares, chocolate buttons etc), for decorating
Method:
Combine all the cake ingredients in a large bowl and beat with an electric whisk until throughly combined. Spoon just under a teaspoonful of the batter into petits fours cases (which should be arranged on two baking trays).
Transfer to an oven pre-heated to 180°C and bake for between 15 and 20 minutes, or until the cakes are well risen and pale golden brown in colour.
Transfer the cakes to a wire rack to cool completely.
In the meantime, prepare the icing (frosting). Combine the icing sugar in a bowl and work in enough of the lemon juice to yield a spreading consistency. Spoon a little on top of each cooled mini cake and spread out with the back of a teaspoon.
Allow to harden and when the icing has very nearly set top with a sweet (candy) of your choice.
