Here is a classic South African recipe for serving gem squash as a starter (appetizer). However, the combination here is sweet enough that it would work as a dessert, particularly if the squash was stuffed with whipped cream prior to serving.
Ingredients:
4 gem squashes
3 tbsp butter
4 tbsp golden caster sugar
freshly-grated nutmeg, for sprinkling
Method:
Bring a pan of lightly-salted water to a boil.
When the water is boiling, halve the gem squashes and scoop out the seeds and pulp from the centres. Drop in the boiling water and cook for about 25 minutes, or until tender.
Drain the squash halves and arrange each one in a serving bowl. Scatter over the golden caster sugar, dice the butter and set in the base of the squashes.
Sprinkle over the grated nutmeg and serve immediately.
