Gehackte Herring

This fish starter is an example of the cuisine of the South African Jewish community. The use of slightly sweet and crisp Marie biscuits being typical. These are substituted in the recipe for the kitke (challah) plaited bread in the Central European Jewish original.
Ingredients:
6 rollmop herring fillets
5 hard-boiled eggs
1 small onion
2 green apples (either tart like Granny Smith or sweet like Golden Delicious)
1 tbsp lemon juice
10 Marie biscuits (or use
challah crumbs)
60g sugar
50ml cider vinegar
1 tsp freshly-ground black pepper, to taste
1/4 tsp ground nutmeg
2 tsp finely-chopped parsley
Method:
Rinse the herring and pat dry. Remove any skin and pull out any visible bones then chop the flesh finely.
Transfer the herring to a mixing bowl. Peel, core and grate the apples then toss them in a teaspoon of lemon juice (this prevents the apple flesh from browning). Finely grate the onion and put in a cloth then wring out the excess juice.
Crush the Marie biscuits. Coarsely grate 3 of the eggs then mix the apple, onion flesh, Biscuits, grated eggs, parsley, black pepper and nutmeg with the fish. Stir with a wooden spoon to combine then add vinegar and sugar to taste.
Turn out onto a flat dish and mould into a circular shape. Finely grate the two remaining eggs over the top of the chopped herring mixture and serve.
