Gâteau au Coco (Coconut Cakes): A Togolese recipe for a cake made with coconut flesh in a flour, oil, sugar and egg base.

Ingredients:

1 coconut
100g sugar
3 eggs
100g plain flour
1 tsp baking powder
250ml oil

Method:

Crack the coconut open and take out the white flesh. Grate the flesh finely then spread out on a clean, dry, cloth.

Cream together the sugar and eggs for about 18 minutes, or until thick and pale. Sift together the flour and baking powder into a bowl.

Mix the grated coconut flesh and the flour mix into the creamed eggs. Bring the mixture together as a dough and turn this out onto a floured work surface. Roll out to about 1.5cm thick then cut out into diamond shapes.

Heat the oil in a deep frying pan, add a few of the dough pieces and fry for about 10 minutes, turning half-way through. These are done when golden brown in colour and cooked through.
