Banana Cake: A classic Togolese cake of banana batter that's oven baked to cook.

Ingredients:

240g plain flour
300g caster sugar
1 tsp baking powder
3 bananas
1 tsp lemon juice
1 tbsp rum
2 eggs
4 tbsp milk
5g butter, melted and cooled
pinch of salt

Method:

Mash the bananas and mix in a bowl with the lemon juice and rum. Add the eggs, milk and butter and mix together until the mixture resembles a light cream.

Sift together the flour, salt, sugar and baking powder into a bowl. Form a well in this mixture and pour in the banana mix. Combine the banana mix with the flour mixture and beat until you have a smooth batter.

Turn the batter into a greased and floured 24cm diameter cake tin. Transfer to an oven pre-heated to 160°C and bake for about 45 minutes, or until the top of the cake is nicely browned and a skewer inserted into the centre emerges cleanly.

Allow the cake to cool in the tin for 10 minutes, then carefully turn out onto a wire rack to cool completely. Garnish with melted chocolate and a few banana slices, cut into wedges and serve.
