Ingredients:

1 roasting chicken (about 2.4kg)
salt, black pepper, and paprika, to taste
5 garlic cloves, minced
120ml chicken stock
6 sprigs of tarragon
butter

Method:

Wash and dry the chicken then season liberally both inside and out with the salt, black pepper and paprika. Spread half the garlic inside the body cavity then place the remainder on the outside of the bird.

Place the bird in a crockpot and set a few pats of butter on the breast. Lay the tarragon on top of the butter. Pour the chicken stock into the crockpot then cover and cook on low for between 6 and 8 hours. Allow the chicken to rest for 10 minutes then carve and serve with the garlic butter sauce.
