Garlic and Olive Oil Mash: An Irish recipe for an accompaniment of creamy mashed potatoes given a contemporary twist with garlic, oil and balsamic vinegar that's served topped with fried onions.

Ingredients:

500g floury potatoes, peeled and cut into chunks
1 small head of garlic
60ml milk
5 tbsp extra-virgin olive oil
salt and freshly-ground black pepper, to taste
2 onions, finely sliced
1 tbsp balsamic vinegar
1 tbsp extra-virgin olive oil, for frying

Method:

Cut the top off the garlic then wrap loosely in foil and place in an oven pre-heated to 200°C. Bake for 25 minutes, or until the garlic is soft.

Bring a pan of salted water to a boil, add the potatoes and cook for between 15 and 20 minutes or until soft. Drain the potatoes thoroughly and return the potatoes to the pan.

Heat the milk until warm then squeeze the soft garlic cloves out of their skins. Add these to the potatoes then mash the potatoes. Gradually stir in 4 tbsp of the oil, alternating with the warmed milk. Continue adding oil and milk, beating with the potatoes until the mixture reaches the desired consistency. Season to taste with salt and black pepper.

In the meantime, heat the remaining oil in a frying pan. Add the onions and cook slowly, stirring frequently, for 20 minutes, or until soft and golden brown. Stir in the balsamic vinegar at this point.

Top the potatoes with the fried onions, drizzle over the olive oil and serve.
