Grains of gari (dried and roasted cassava grains) as used in this Togolese and Beninese recipe of Gari Dossi.
Ingredients:
100g good-quality gari (cassava flour)
500ml milk (enough to completely cover the gari)
honey or
mint syrup (sirop de menthe), to sweeten
Method:
Turn the gari (cassava flour) into a bowl. Crumble the gari to break it up then pour over the milk, ensuring that the gari is completely covered.
Cover and set aside to soak for 20 minutes. After this time, sweeten to taste and serve.
This can be served either as a dessert or as a breakfast dish.
Typically it's served accompanied by roasted peanuts, roasted almonds or toasted coconut to serve as a garnish.
