Gardener's Chicken: An Irish recipe for a dish of chicken cooked in chicken stock on a base of mixed vegetables sitting on a thin layer of smoked ham.

Ingredients:

500g small new potatoes
1.5kg chicken
4 thin slices of lightly-smoked ham, trimmed
12 small onion, trimmed
225g small carrots, halved
25g small turnips, halved
1 fennel bulb, quartered
150ml chicken stock
1 bouquet garni
salt and freshly-ground black pepper, to taste
fresh parsley, chopped, to garnish

Method:

Arrange the ham in a heavy-based, flameproof casserole dish. Arrange the vegetables on top to cover.

Season the chicken inside and out with salt and black pepper, then sit on top of the vegetables. Pour over the stock and add the bouquet garni. Cover with a tight-fitting lid then transfer to an oven pre-heated to 200°C and bake for 30 minutes. Reduce the temperature to 180°C and bake for a further 80 minutes.

Sprinkle over the chopped parsley and serve.
