Gammon Steaks with Spicy Apple Rings: Classic British recipe for a barbecue dish of gammon steaks in a mustard and honey glaze that's cooked on a barbecue and served with spiced apple rings.
For the Apple Rings:
2 green eating apples (eg Granny Smith)
2 tsp demerara sugar
1/4 tsp freshly-grated nutmeg
1/4 tsp ground cinnamon
1/4 tsp ground allspice
2 tbsp melted butter
Method:
With a pair of kitchen scissors, make a number of cuts around the edges of the gammon steaks (this prevents them from curling up during cooking). Spread a little whole-grain mustard over the gammon and set aside.
In a bowl, whisk together the honey, lemon juice and oil.
Core the apples then cut into thick slices (do not peel). Mix together the sugar and the spices on a plate and press both sides of the apple slices into this mixture.
Place the gammon steaks on the oiled rack of a barbecue over hot coals and cook for about 4 minutes per side, basting frequently with the honey and lemon mixture to help prevent the meat from drying out.
Brush the apple slices with a little of the melted butter, then place on the barbecue and cook alongside the pork for about 4 minutes (turn them half way through). Brush the apples with more of the melted butter as they cook.
Serve the gammon steaks with the apple slices as a garnish.
