These are a classic Malian street snack commonly prepared in honeycomb moulds that allows for a dozen to be made at a time.

Ingredients:

250g rice flour
1 packet of active, dried, yeast
pinch of salt
1 tbsp oil
lukewarm water

Method:

Dissolve the yeast in a little lukewarm water and set aside.

In a bowl, mix the rice flour with the yeast, salt, oil and a little lukewarm water. Gradually work in more lukewarm water until you have a batter that's the consistency of a thick pancake batter.

Cover with a damp cloth and set aside to stand in a warm place for about 90 minutes.

Oil some muffin tins and set in an oven pre-heated to 200°C to warm for 5 minutes. Remove from the oven and pour a little of the yeasted rice batter into the base. Return to the oven and cook for about 5 minutes, or until puffed up and lightly browned.

Remove from the pan and serve warm. Whilst you serve the first batch, re-oil the pans, return to the oven for 5 minutes to warm through then prepare a second batch in the same manner as the first.
