Gai Pad King (Ginger and Chicken Stir Fry)

Gai Pad King (Ginger and Chicken Stir Fry) is a traditional Thai recipe for a classic stir-fry of chicken, onion, ginger and garlic with Jew's Ear (tree ear) mushrooms in a sugar and fish sauce base. Ingredients:

100g Wood Ear (Jew's Ear) mushrooms, soaked in water for 20 minutes then shred
2 tsp sugar (preferably palm sugar, but demerara will do)
1 onion, halved and then sliced into thin wedges
40g ginger, cut into thin juliennes about 3cm long
2 garlic cloves, finely chopped
2 tbsp Nam Pla (fish sauce)
250g chicken, cut into strips
oil for frying

Method


Add 1 tsp oil to a hot wok over medium high heat. Add the garlic and some of the ginger and fry for a minute (the garlic should begin to brown). Add the chicken and stir-fry for 1 minute before adding the onion, the remainder of the ginger and the fungus. Stir to combine then add the Nam Pla and sugar.

Stir for a few minutes so that everything heats through and the flavours combine.

Serve with Thai Jasmine rice.
