Fugazza (Argentinian Pizza) is a traditional Argentinian recipe for a classic pizza with an onion and cheese topping. The full recipe is presented here and I hope you enjoy this classic Argentinian version of: Argentinian Pizza (Fugazza).
For the topping:
2 Yellow onions sliced thinly
500g Low moisture mozzarella cheese, grated
225g Pitted green olives (optional), halved
Extra virgin olive oil for drizzling
55g Parmesan cheese grated
sea salt
Method:
Begin by preparing the pizza dough according to the perfect pizza dough recipe. Don't forget to remove it from the refrigerator at least 2 hours before cooking.
Pre-heat your pizza oven to 400-425°C, or use your home oven at 220°C with a pizza stone pre-heated for an hour.
Stretch each piece of pizza dough into roughly 30cm rounds.
For each pizza, drizzle the dough with olive oil, spread about a third of the cheese evenly, top with about a third of the onions evenly, add a third of the olives (if desired), and sprinkle with salt.
Bake in the pizza oven for roughly 90 seconds while rotating to get even browning. If using a home kitchen oven, this process will take longer—just keep an eye on the pizza and rotate as needed for around 6-6 minutes.
Remove pizza from oven and finish with a good sprinkle of Parmesan cheese and serve.
