Fudge Frosting

Ingredients:

1 tbsp butter
225g sugar
small pinch of salt
75ml 50:50 mix of milk and cream
30g chocolate
1/2 tsp vanilla extract

Method:

Combine the milk, sugar, salt and chocolate in a saucepan. Bring the mixture to a simmer and continue cooking until the chocolate has completely melted. Increase to a boil and continue boiling, without stirring, until the mixture reaches 142°C (the Soft-Ball Stage).

Take off the heat, add the butter and set aside to stand until cool and thick. Add the vanilla and pour the frosting over the your cake before spreading to cover.
