Fruity Skewers with Chocolate Dipping Sauce: Classic British recipe for a barbecue desert of mixed fruit skewers with a honey and orange baste served with a chocolate dipping sauce.
Ingredients:
orange segments, banana slices, strawberries, pineapple chunks, mango pieces, apricots, apple pieces, pears, kiwi fruit (or your choice of firm fruit)
1 tbsp lemon juice
For the Baste:
4 tbsp clear honey
finely-grated zest of 1/2 orange
juice of 1/2 orange
For the Chocolate Sauce:
50g butter
50g dark chocolate, finely chopped
1/2 tsp cocoa powder
2 tbsp golden syrup (light corn syrup)
Method:
For the chocolate sauce, combine the chocolate, butter, cocoa powder and golden syrup in a small saucepan. Cook gently over low heat, stirring constantly, until the ingredients have melted and thoroughly combined.
Prepare the fruit and cut into pieces about the same size as the strawberries. Dip any apple, pear and banana pieces in the lemon juice to prevent them from browning.
Threat the fruit onto metal skewers.
For the baste, mix together the honey, orange juice and orange zest in a saucepan. Heat gently until liquid then brush all over the fruit.
Set the fruit on the grilled rack of a barbecue over hot coals. Cook for about 8 minutes, turning frequently and brushing with any left-over baste.
Serve hot, accompanied by the chocolate dipping sauce.
