Fruity Pork Skewers a Classic British recipe for a barbecue dish of pork threaded onto skewers with prunes, dried apricots and citrus slices that are marinated in orange juice and oil before cooking.
Ingredients:
4 boneless pork loin steaks
8 ready to eat prunes
8 ready to eat dried apricots
lemon and orange slices, to garnish
For the Marinade:
4 tbsp orange juice
2 tbsp olive oil
1 tsp dried bayleaves, ground
salt and freshly-ground black pepper, to taste
Method:
Trim the fat from the pork, then cut the meat into even-sized cubes.
Place the pork pieces in a shallow, non-reactive dish and add the prunes and apricots.
For the marinade, whisk together the orange juice, oil, bayleaves and seasonings in a bowl. Pour this marinade over the pork and fruit mixture, then toss to combine. Set aside in the refrigerator to marinate for at least 60 minutes (over night is best).
Soak 4 wooden skewers in a bowl of cold water for at least 30 minutes (this helps prevent them from burning on the barbecue). Remove the pork from the marinade using a slotted spoon (reserve the marinade for basting). Thread the pork and fruit onto the skewers.
Place the kebabs on the oiled rack of a barbecue over medium-hot coals and cook for about 12 minutes, turning frequently and basting with the left-over marinade, until the pork is cooked through.
Transfer the pork skewers to warmed serving plates. Garnish with slices of lemon and orange and serve immediately.
