This is a modern Irish recipe that uses the seaweed sea spaghetti in an unusual way, transforming it into a dessert.

Ingredients:

For the Sea Spaghetti:
20g dried sea spaghetti
1 tsp raspberry vinegar
1 tsp runny honey
1 tsp kirsch or cherry brandy

For the Fruit Salad:
200g dried figs
200g dried apricots
60g sultanas
1/4 cinnamon stick
300ml green tea
juice of 1 lemon
1 tsp black treacle (molasses)
1 tsp kirsch or cherry brandy
1 tsp raspberry vinegar
10g mixed frozen berries
200g pineapple chunks (fresh or tinned)
mascarpone cheese, to serve

Method:

Rinse the sea spaghetti in cold water then cut into 2cm lengths. Arrange these in a bowl, pour over 100ml water then add the raspberry vinegar, honey, kirsch (or cherry brandy). Cover the bowl and set aside to soak at room temperature over night.

In the meantime, add the dried figs and apricots, add the green tea, lemon juice, treacle, raspberry vinegar and the kirsch (or cherry brandy). Set aside to soak over night.

The following day, turn the dried fruit (and their soaking liquid into a pan). Add the cinnamon stick, bring to a simmer and cook gently for 20 minutes. Add the sea spaghetti (with soaking liquid), bring back to a simmer then take off the heat and set aside to cool slightly.

Turn the mixture into a large serving dish then add the frozen berries and the pineapple chunks.

Allow to cool to room temperature before serving. Garnish each portion with a generous dollop of mascarpone cheese.
