Frites d'Igname (Yam Chips)

Basically these are coarsely-grated slivers of boiled yam that are finished by deep frying in oil.

Ingredients:

1 medium yam tuber
oil for deep frying
salt, to taste

Method:

Peel and wash the yams then cut into 6cm chunks.

Bring a pan of salted water to a boil, add the yam chunks and blanch for a few minutes. Drain and allow to cool then refrigerate for a few hours (this both firms up the texture and improves the texture on frying).

Heat oil in a large pot or deep fryer to 180°C. Whilst the oil is heating, grate the yam pieces coarsely.

When the oil is hot, drop in the yam shavings by the handful. Deep fry until crisp and golden then remove with a spider or slotted spoon. Drain on kitchen paper, season with salt and serve as you prepare the next batch.
