Method:

Pick fresh common mallow flowers, trimming the flower stems so that no more than 5mm is left on each flower (these can be bitter).

Wash the flowers then set aside in a colander to dry.

In the meantime, beat the egg in a bowl and work in the flour until smooth. Add the nutmeg before working in the beer until you have a smooth batter. Cover with a cloth and set aside to rest for 30 minutes.

Heat oil in a wok or deep fryer to 180°C. When the oil is hot, stir the flowers into the batter, ensuring that they are well coated. Drop the mixture by the tablespoon into the hot oil and cook until puffed up, crisp and golden. Remove with a spider or slotted spoon and drain on kitchen paper.

Serve hot, with a sprinkling of sea salt.
