Ingredients:
4 herring
100g fine oatmeal
salt and freshly-ground black pepper, to taste
oil or lard for frying
lemon wedges, to accompany
Method:
Scrape the fish with a knife to remove the scales. Wash and clean well then remove the heads before splitting the fish down the back and removing the backbones. This will give you eight fillets.
Season the oatmeal then use to coat the fish on both sides. Heat oil or lard in a frying pan, add the fish and fry for about 5 minutes per side, or until crisp and nicely browned.
