Fresh Cranberry Sauce is a traditional American recipe for a classic sauce made with fresh cranberries, sugar, citrus juice and zest with nutmeg set with cornflour that is used as a vegetable filling. Ingredients:
450g fresh cranberries
400g sugar
500ml water
juice of 2 large oranges
juice of 1 lemon
freshly-grated zest of 1 orange
freshly-grated nutmeg, to taste
1 tbsp cornflour (cornstarch) mixed to a slurry with 3 tbsp water
Method:
Combine the cranberries and water in a pan over medium heat. Cook for about 10 minutes, until the fruit 'pop' and burst. Now add all the remaining ingredients (except the cornflour) and heat gently until the sugar dissolves.
Add the cornflour slurry and mix thoroughly to combine then bring to a gently simmer and continue cooking until the sauce has thickened. Ladle into sterilized jars that have been baked in an oven at 80°C for 15 minutes, seal, allow to cool and refrigerate.
If done properly the sauce will keep in the refrigerator for several months
