This is a classic British recipe for chicken flavoured with mustard and English mace leaves cooked in a foil parcel.

Ingredients:

4 skinless chicken breasts
2 tbsp natural yoghurt
2 tbsp Dijon mustard
olive oil for brushing
salt and freshly-ground black pepper, to taste
6 tbsp English Mace, chopped
juice of 1 lemon

Method:

Mix together the yoghurt and mustard and use this to evenly coat the chicken pieces. Sprinkle with salt and black pepper then arrange each chicken breast on a piece of kitchen foil brushed with olive oil.

Scatter a the chopped English mace thickly over the chicken then drizzle over the lemon juice. Take the foil and fold over the chicken breast to form a parcel. Sit the parcels on a baking tray then transfer to an oven pre-heated to 190°C and bake for 30 minutes, or until the chicken breasts are thoroughly cooked through.

Serve hot, accompanied by rice and a green salad.
