Fiskgryta (Fish Stew) a Classic Swedish recipe for a stew of fish and leek cooked in a saffron and tomato flavoured sour cream base.

Ingredients:

600g fish fillets (either salmon or white fish), cut into large pieces
1/2 tsp sea salt
pinch of freshly-ground black pepper
1 leek
butter
500g saffron and tomato flavoured sour cram (simply mix 2 tbsp tomato purée and a generous pinch of crumbled saffron into your sour cream)
250ml water
1 tomato

Method:

Cut the fish into pieces and season with salt and black pepper. Cut the leeks into pieces.

Melt the butter in a saucepan, add the leeks and fry for about 4 minutes, or until just tender.

Stir in the sour cream and water and bring to a simmer. Add the fish pieces, cover and cook gently for about 5 minutes, until the fish is cooked through and tender.

Turn the fish stew onto a serving dish. Dice the tomatoes, sprinkle over the top and serve immediately, accompanied by boiled rice.
