Fish Newberg

This is a classic dish from the 1930s and it's one of my attempts at bringing a traditional British dish back from the verge of extinction.

Ingredients:

3 large mushrooms, finely sliced and chopped
450g fillet of firm white fish (cod, hake, pollack, etc), sliced into strips
30g butter
1 tbsp plain flour
1/2 tsp curry powder
100ml milk
salt and black pepper, to taste
1 tsp mustard powder
1 tbsp vinegar

Method:

Melt the butter in a frying pan and add the fish and mushrooms. Fry for about 5 minutes.

Meanwhile, combine all the other ingredients in a bowl and whisk until smooth. After the fish has cooked for 5 minutes ad the milk mixture to the pan. Stir well until the mixture thickens and boils then reduce to a slow simmer and cook for about 15 minutes, or until the fish is done through.

To serve arrange mashed potatoes around the outside of a serving dish and place the fish mixture in the centre.
