Ingredients:
500g fish fillets
1 breadfruit, peeled and sliced (remove the core)
250ml coconut milk
1 onion, chopped
2 garlic cloves, minced
1 tbsp coconut oil
Salt and freshly-ground black pepper, to taste
Method:
Pre-heat your oven to 180°C.
Fry onion and garlic in coconut oil until soft.
Layer the breadfruit slices and fish fillets in a baking or casserole dish. Pour over the coconut milk then transfer to your pre-heated oven and bake for about 30-35 minutes or until the fish and breadfruit are tender and the top is nicely browned.
