Ingredients:

200g cooked Finnan haddie, flaked
60g grated cheese
1 egg
30g butter
1 tbsp milk
salt and freshly-ground black pepper, to taste
1/2 tsp prepared mustard (or to taste)
hot buttered toast, to serve

Method:

Remove any bones from the fish and flake the flesh.

Melt the butter in a pan then stir in the fish, milk, cheese and add the seasonings to taste. Stir the mixture over gentle heat until the cheese has just melted and everything is heated through.

Serve immediately, spread on hot, buttered, toast.
