Fini N'Gomi (Fonio Fritters)

Fini N'Gomi (Fonio Fritters) is a traditional Malian recipe for a classic snack of fritters made from fonio millet, fonio and sweet potato flour sweetened with sugar and leavened with yeast. These little fried cakes are typically made in n'gomi moulds which have small cups for frying the batter. You can cook them as small pancakes or you can use poached egg pans (the wells of these are about the right size).

Ingredients:

100g bleached fonio
250g fonio flour
100g sweet potato flour (or boiled and mashed sweet potato)
150g sugar
150ml oil
1 tsp baker's yeast

Method:

Combine the fonio grains, fonio flour and sweet potato flour in a bowl. Add the sugar and yeast and enough water to yield a batter the consistency of double cream.

Cover with clingfilm (plastic wrap) and set aside in a warm place to ferment for between 4 and 6 hours.

Use the oil to grease the wells of our fritter moulds. Add a ladleful of the batter into each well and fry until browned on the base. Turn the fritters over and fry on the other side until browned.

Serve warm.

As variants, you can substitute mashed yams or mashed plantains or bananas for the sweet potatoes.
