Ingredients:
3 tbsp ground turmeric
2 tsp coriander seeds
2 tsp cumin seeds
2 tsp ground cinnamon
2 tsp black peppercorns
1 tsp mustard seeds
1 tsp fenugreek seeds
1 tsp cardamom seeds
1 tsp ground ginger
2 dried chillies
1 tbsp garlic powder
1 tbsp onion powder
1 tsp celery salt
Method:
Place a non-stick pan over medium high heat. When hot add the whole spices (coriander seeds, cumin seeds, black peppercorns, mustard seeds, fenugreek seeds, cardamom seeds and dried chillies). Stir fry for about 2 minutes, until the spices have darkened and are aromatic (but be careful they do not burn).
Turn onto a plate to cool then transfer to a spice or coffee grinder along with all the other spices. Process to a fine powder then store in an air-tight jar until needed.
