Ingredients:
2 pork fillets (about 250g each)
salt and freshly-ground black pepper, to taste
enough sea lettuce greens to cover the fillets
oil for frying
Method:
Season the pork fillets with salt and black pepper. Carefully arrange the sea lettuce leaves so that they completely cover the pork fillets.
Heat oil in a large frying pan. When hot, add the sea lettuce coated pork fillets and fry for about 5 minutes on one side. Turn and fry for about 5 minutes on the other side.
Continue cooking for about 8 minutes more, turning the pork occasionally, or until the sea lettuce is crispy and the pork is cooked through. Serve hot.
