Raita is an example of Fijian Indian cuisine. It's a condiment that makes a wonderful accompaniment to any curry dish.
Ingredients:
500ml yoghurt or light sour cream
1 cucumber, grated
1 carrot, grated
1 garlic clove, minced
1 tsp cumin seeds
salt to taste
Method:
Toast the cumin seeds for a few minutes in a dry frying pan, until they are fragrant and slightly toasted then grind to a fine powder. Combine with all the other ingredients and serve as an accompaniment to any curry dish.
