Apple Cake: An Irish recipe for a cake made from a yoghurt batter containing potatoes, figs and walnuts that yields a moist but not too rich fruit cake.

Ingredients:

115g butter
225g soft brown sugar
1 egg, beaten
115g cooked potatoes, passed through a fine-meshed sieve to purée
350g plain flour
1 tsp bicarbonate of soda
1 tsp baking powder
150ml natural yoghurt
150g dried figs, chopped
115g walnuts, chopped
finely-grated zest of 1 orange
juice of 1 orange
115g caster sugar

Method:

Cream together the butter and brown sugar until the mixture is light and fluffy. Gradually add the egg, beating thoroughly to combine after each addition. Now mix in the potato until thoroughly combined into the creamed mixture.

Sift together the flour, bicarbonate of soda and baking powder over the top of the creamed mixture. Lightly fold into the batter with a metal spoon then stir in the yoghurt, figs, walnuts and orange zest.

Turn the resultant batter into a well-buttered 23 x 12cm loaf tin. Transfer to an oven pre-heated to 180°C and bake for about 75 minutes, or until a skewer inserted into the centre feels warm on the lips when withdrawn.

For the glaze, mix together the sugar and orange juice then pour over the cake as soon as it emerges from the oven. Set aside to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely before slicing and serving.
