Fat Hen Quiche is a modern British recipe for a classic dish of a pastry case filled with courgette, goat's cheese and fat hen leaves topped with hard goat's cheese and baked until cooked through. Ingredients:
1 quiche pastry base
4 shallots, minced
1 large handful of Fat Hen leaves
200g goat's cheese
1 courgette, cut into thin slices
100g hard goat's cheese, grated
1 sprig of rosemary, needles only
salt and freshly-ground black pepper, to taste
Method:
Roll out the pastry until large enough to cover the base and sides of a quiche dish. Arrange the shallots on the base then add a layer of fat hen, a layer of goat's cheese and a later of the courgette.
Sprinkle the grated cheese on top then scatter over the rosemary needles and season to taste.
Transfer to an oven pre-heated to 180°C and bake for about 40 minutes, or until the pastry is cooked and golden and the filling is heated through and nicely browned on top. Serve warm.
