Ensalada de Frutas Tropicales (Tropical Fruit Salad) is a traditional Equatorial Guinean recipe for a classic mixed fruit salad containing guava, clementines, mango, tomato, papaya and coconut sweetened with honey served as a dessert. Ingredients:

grapes taken from 1 small bunch
1 bababa, sliced into rounds
3 medium guavas
3 clementine oranges
1 mango
1 semi-ripe tomato
1/2 papaya, de-seeded
1/2 coconut
3 tbsp runny honey
1 orange

Method:

Peel the grapes and place in a bowl. Peel the guavas and cut the flesh to the same size as the grapes. Peel the clementine orange and separate the segments hen halve these.

Peel the mango and slice the flesh from the stone then cut the flesh into cubes. Blanch, peel and de-seed the tomato then dice the flesh.

Peel the papaya and cube the flesh. Peel and grate the coconut flesh.

Combine all the fruit in the bowl with the peeled grapes annd arrange the banana along the centre.

Squeeze the juice from the orange and mix with the honey. Drizzle this over the fruit and toss to combine.

Chill in the refrigerator for 30 minutes before serving.
