Emirati Yellow Rice

This rice recipe is very simple and is prepared with the stock from Fried Chicken Emirati Style.
Ingredients:
500-600g basmati rice
chicken stock (either
fried chicken Emirati style, home-made chicken stock or chicken stock cubes crumbled in water)
water
a few generous pinch of saffron
1 tsp ground turmeric
Method:
Gently wash the rice in three changes of water. After the last change of water, place the rice in a bowl, cover with water and set aside to soak for 30 minutes.
If using the stock from the fried chicken Emirati style strain this into a large pot. Crumble in the saffron and stir in the turmeric then add enough water to fill the pot 2/3 full.
Bring the liquid to a boil then drain the rice and add to the pan. Very gently stir to mix everything together
Drain the rice and add to the boiling stock. Stir once or twice very gently.
Bring to a boil and continue boiling for 6 minutes, or until the rice is tender. Drain the rice and serve. Do not discard the stock as this can be used either to prepare another batch of rice or to make Emirati chicken soup.
