Elderflower Cupcakes

The flavour of elderflower is quite delicate but still unique. It’s one of those flowers that really lends itself to cooking. Here I’m using both the flowers and elderflower cordial to flavour classic cupcakes. The flours are used in the cake itself, but also in the icing and the garnish.

Ingredients:

100g (1/2 cup) softened butter or an alternative butter spread
100g (1/2 cup) caster sugar
1 egg (lightly beaten)
100g self-raising flour (or alternatively 100g of plain flour with 2 teaspoons of baking powder added)
1 teaspoon of baking powder
1 tablespoon of elderflower cordial
1 tbsp fresh elderflower flowers (plus more for garnish)

For the icing:
50g (½ cup) icing sugar
elderflower cordial
Elderflowers, to garnish

Method:

Pre-heat your oven to 180°C (340°F).

Cream together the butter and sugar until pale and fluffy. Gradually add in the beaten egg, mixing thoroughly to combine after each addition. Mix in the elderflower cordial and elderflowers then sift over the flour and baking powder then beat with a whisk until the batter is soft and fluffy.

Line the wells of two patty pans with paper cupcake cases. Divide the cake batter between the 12 wells (don’t fill to the top as the mixture rises quite a lot). Transfer to you pre-heated oven and bake for 15 minutes or until the cakes are golden brown.

Allow to cool in the tin for 5 minutes then transfer to a wire rack to cool completely. For the icing (frosting) sift the icing sugar into a bowl then slowly work in the elderflower cordial until you have a just spreadable icing (about 1 tbsp). Garnish with elderflower flowers then set aside for the icing to harden a little before serving.
