Ingredients:

1.5l elderberries (collect the entire spray)
1 tbsp cornflour per 500ml juice
sugar, to taste
lemon juice, to taste

Method:

Thoroughly was the berries and place in a pot (along with the stems). Barely cover with water, bring to a simmer then cover and cook for about 10 minutes, or until the fruit is tender. Strain the juice from the berries (press down only gently or the juice will taste of stems and not berries) then measure the resultant volume and transfer to a clean pan.

Measure 1 tbsp cornflour per 500ml of juice place in a bowl and mix with double the volume of water. (ie if you have 2 tbsp cornflour add 4 tbsp water) Whisk to a slurry then add to the elderberry juice. Bring to a simmer then add sugar and lemon juice to taste. The acidity and sweetness of the soup are very subjective — I like mine very tart and don't add much sugar at all. Your tastes will differ.

Continue cooking gently until the mixture has thickened then transfer to warmed serving bowls and serve hot.
