Edinburgh during the nineteenth and early 20th Centuries was famous for its coal fire smogs, indeed the city used to be known as 'Auld Reekie' (Old Smokie). This recipe dates from the Victorian era and commemorates those days of Edinburgh's 'big smoke'.

Ingredients:

300ml double cream
30g caster sugar
60g ratafia biscuits (or macaroons)
almond essence
Drambuie, to taste
30g slivered almonds, toasted

Method:

Whip the cream until stiff then add the sugar and mix until dissolved. Crush the biscuits and mix into the cream before adding a few drops of almond essence. Now add the Drambuie (to taste) and mix to combine. Spoon into glasses and chill well in the refrigerator.

Top with the toasted almonds and serve.
