Garri is dried and grated cassava. This is the classic ‘fufu’ of West Africa. It is made in exactly the same way as all other swallows (carbohydrate staples to serve with soups) in that the flour is added to boiling water and is cooked, stirring until thick enough to come away from the sides of the pan. Then its shaped, typically into balls, and served as an accompaniment. It is most associated with the Yoruba tribe of Nigeria. This is the modern version, cooked in a microwave.
Ingredients:
360ml (1 ½ cups) water
125g (1 cup) garri
Method:
Boil water and pour in a bowl. Sprinkle over the garri, cover the bowl, place in your microwave and microwave on high for 2 minutes (note that the traditional way of doing this would be in a pan with boiling water over medium heat).
Carefully remove from the microwave and use a wooden spoon (or a traditional omorogun stirrer) until the mixture is smooth and thick.
Form into balls and serve immediately with your choice of soup.
