Ingredients:

120ml golden syrup (or corn syrup)
1 egg white
1 tsp lemon juice

Method:

Turn the syrup into a saucepan, place over high heat and cook until boiling. Meanwhile, beat the egg white with the lemon juice until frothy. Take the syrup off the heat and, whilst beating constantly, pour into the egg white mix. Continue beating for about 4 minutes, or until stiff peaks form, before use. This is great for decorating the tops of cupcakes and other small cakes as they only need to be dipped in the icing (frosting) to coat.
