Easter Rice Pudding

This is an unusual mix between a custard and a rice pudding where cooked rice is baked in a custard base.

Ingredients:

10 or 12 eggs
300g sugar
1 tsp salt
1 tsp vanilla extract
1 tsp lemon juice
325g cooked rice (short grain is best)
1l milk
120ml melted butter
freshly-grated nutmeg, to taste

Method:

Crack the eggs into a bowl and beat well. Add the sugar and beat until the mixture is pale and creamy then beat in the vanilla extract, salt and lemon juice. Now whisk in the cooked rice and melted butter before adding he milk.

Pour the resultant mixture into a well greased baking dish then grate a little nutmeg on top and transfer to an oven pre-heated to 180°C. Bake for about 60 minutes, or until firm and golden on top. Serve hot.
