Ingredients:
200g butter or margarine
300g sugar
3 eggs
420g plain flour, sifted
3 tsp baking powder
1 tsp milk
2 tsp vanilla extract
Method:
Cream together the butter and sugar until pale and fluffy. Add the eggs one at a time, beating thoroughly to combine after each addition. Sift together the flour and baking powder then fold into the creamed mixture before adding the vanilla extract and enough milk to bring the ingredients together as a dough.
Cover the dough in clingfilm (plastic wrap) and refrigerate for 30 minutes before rolling out on a lightly-floured work surface. Take a rabbit-shaped pastry cutter, dip in four and use to cut as many shapes from the dough as you can. Transfer these onto a greased baking tray (re-roll the scraps and cut more out) then transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until crisp and golden. Dust with sugar, allow to cool and serve.
