Ingredients:

1 medium onion, chopped
2.1l vegetable stock
1 tsp ground cumin
1 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp cayenne pepper
1 large carrot, sliced
190g tomatoes, chopped
250g sweetcorn
390g red potatoes, chopped
80ml peanut butter
120ml boiling water
750g green cabbage, chopped
180g green beans, sliced
1 medium banana

Method:

Add 120ml of vegetable broth to a large pot over medium heat and cook the onion in this until softened (about 4 minutes). Stir-in the spices and the cayenne pepper and cook for 1 minute. Add the remaining vegetable broth, carrots, tomatoes, corn and potatoes. Return the mixture to a boil then reduce the heat and simmer, covered, for 30 minutes.

Meanwhile whisk together the peanut butter and boiling water in a bowl until smooth. Add this mixture to the pot, along with the cabbage and green beans. Stir to combine and simmer for 15 minutes.

Serve garnished with banana slices.
