Dundu Oniyeri

Ingredients:

900g yams, peeled and cut into 1.5cm thick slices
1l water
salt
200g flour (wheat or sorghum, typically)
1 tsp salt
1/2 tsp black pepper
1/2 tsp cinnamon
1/2 tsp paprika
2 eggs lightly beaten with 2 tbsp water

Method:

Add the yam slices to the salted water in a pan. Cook until just tender, drain and allow to cool. Mix the spices and flour together, dip the yam slices in the seasoned flour and then dip in the egg mixture before dipping in the seasoned flour again. Deep-fay fry at 180°C (350°F/Gas Mark 4), cooking until golden brown.

Serve very hot as an accompaniment to West African soups or stews.
