Dulse Soda Bread

Ingredients:

25g dried dulse
110g butter, melted and cooled
1 large carrot, grated
4 eggs
50g caster sugar
250g plain flour, sifted
1 1/2 tsp baking powder

Method:

Chop the dulse finely in a food processor then scrape into a bowl and pour over enough cold water to cover. Set aside to soak for 10 minutes. After this time, drain the dulse and pat dry.

Brush a loaf tin with melted butter. Pour the remaining melted butter into a bowl and add the eggs, dulse, carrot, sugar and salt. Beat well to combine then gradually fold in the flour and baking powder. Pour this mixture into the prepared loaf tin then transfer to an oven pre-heated to 140°C and bake for about 45 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.

Allow to cool in the tin for 5 minutes before turning out onto a wire rack to cool completely. Cut into slices and serve. This makes a great cake to go with tea or an unusual accompaniment to soups.
