Dulse Potato Cakes

This is a traditional Irish version of bubble and squeak that uses fresh dulse instead of the more usual cabbage. This is a trult delicious dish and if you're a wild forager, you really should give it a go. It can also be made with rehydrated dried dulse.

Ingredients:

200g fresh red dulse, rinsed thoroughly under running water to remove sand and any attached shells
200g potatoes, peeled, washed and cut into 4-5cm chunks
1 medium onion, chopped fairly finely
Knob of butter (optional)
4 tbsp flour (optional)
1-2 tbsp of sunflower oil
freshly-grund black Pepper, to taste

Method:

Combine the dulse, potatoes and onion in a saucepan. Pour over enough water to cover everything by 4cm then bring to a boil. Recue to a simmer and cook for 15-20 minutes untilthe potatoes are tender.

Pour off any excess water then add a knob of butter and mash everything together (coarse or smooth, depending on your preference).

If desired, you can mix in a little flour to dry the mixture then shape into patties before frying. I opted for the more traditional way of fillig the pan with the mixture and frying.

Place a non-stick frying pan over medium heat and when hot add the sunflower oil. Use this to fry the patties (or the mixtur as is), and fry for 4-5 minutes per side until golden and crispy on the outside.

Serve hot as an accompaniment.
