Ingredients:
1 duck carcass (preferably with giblets)
2 slices root ginger
450g bak choi (Chinese cabbage), finely shredded (a chiffonade)
salt and freshly-ground black pepper, to taste
Method:
Break the duck carcass apart and place in a large pan. Add the giblets and any left-over meat then cover with water and add the ginger. Bring to a boil, skim any fat from the surface then lower the heat and simmer for at least half an hour.
