Dublin Lawyer is a traditional Irish dish made with lobster cooked in a creamy sauce with whiskey, butter, and herbs. It’s a luxurious dish that is perfect for a special occasion or celebration.

Ingredients:

2 lobster tails, chopped
125ml double cream
60ml Irish whiskey
4 tbsp unsalted butter
1/2 tsp paprika
Salt and freshly-ground black pepper, to taste
Fresh parsley to garnish

Method:

Place a saucepan over medium heat. When hot add the butter and allow to melt until foaming.

Add the chopped lobster tails and fry in the butter for 2-3 minutes until they turn pink.

Pour the whiskey into the pan and continue cooking for about 2 minutes, until the volume reduces by half.

Now stir in the cream, paprika and season to taste with salt and black pepper.

Continue cooking for 5-7 minutes more, until the sauce thickens. Serve the lobster in the sauce, garnished with fresh parsley.
