This is a classic Irish bacon, sausage and potato stew cooked in cider.

Ingredients:

300g bacon rashers
675g pork sausages
2 onions, sliced
1 garlic clove
3 large potatoes, peeled and thickly sliced
2 carrots, thickly sliced
1 bouquet garni (thyme, rosemary, sage and bayleaf)
freshly-ground black pepper, to taste
300ml cider
fresh parsley, to garnish

Method:

Add the bacon to a large frying pan and fry until they render their fat and become crisp. Transfer to a large saucepan and set aside. Add the sausages to the pan and fry in the released bacon fat. Cook until well browned on all sides then add to the bacon in the saucepan.

Place the onions and the whole garlic clove in the frying pan and cook until softened (about 5 minutes) then add to the saucepan with the sausage and bacon. Now add the potatoes and carrots to the pan. Insert the bouquet garni in the centre of the mixture then season with black pepper and pour the cider over the top.

Partially cover the pan with a lid and bring to a simmer. Cook gently for about 90 minutes, or until everything has cooked through. Transfer the contents of the pan to a warmed serving dish and garnish with the parsley. Serve immediately.
