Method:

Combine the dry baking mix and sugar in a bowl and stir with a fork to combine. Whisk the egg into the water and add to the cake mix. Stir until the dry ingredients are just moistened (the secret of muffins being to make them quickly). Immediately spoon into lightly-greased muffin tins, filling the wells no more than 3/4 full. Bake in an oven pre-heated to 180°C (350°F/Gas Mark 4) for about 15 minutes, or until well-risen and golden.

When the muffins are ready, stir-together the lemon juice and remaining sugar and drizzle this over the muffins. Allow to cool then take out of the tins carefully and place on a wire rack to cool.
