This is a classic North European method for preserving sea-buckthorn berries for later use.

Ingredients:

500g sea-buckthorn berries

Method:

Wash the berries thoroughly and set out on newspaper in a sunny dry spot to dry out. If it's a warm autumn you can dry the fruit naturally in the sun for about 10 days. If it's not a good autumn then arrange the fruit in a single layer on baking trays.

Pre-heat your oven to 50°C then turn your oven off, add the fruit and leave in the oven over night. Repeat this process every night for a week until the fruit are completely dry.

When you have dried the fruit place in a coffee grinder and render to a powder (add the entire fruit and the seeds). Transfer to an air-tight jar and store. This powder can be used as a condiment for breakfast and fruit dishes or it can be used as a spice to flavour stews, pies and cakes.
